Kuih Keria - Malay Doughnuts




Hidayah, sorry for the late posting!

Ingredients:

2 large pieces sweet potatoes, skinned, boiled & mashed.
Plain flour ( about 1/3 the amount of mashed sweet potatoes)
Sugar (lots of it!)
Oil for frying

Method:
Add flour to the mashed sweet potatoes and form the doughnut rings.
Fry the rings in oil until golden and set aside.

The most difficult part of this recipe is to sugar coat the rings.
This is done by first heating 2-3 tablespoons of water with 6 -7 tablespoons of sugar (the ratio is about 1: 5) to form a really thick & saturated sugar solution but not caramelised sugar. This must be done over a very low heat and must not be rushed.
Once the sugar solution is done, you will be able to see it frothing with white bubbles..(NOT BROWN!!)
Put the rings into the sugar solution, turn off the heat and continue mixing the rings so that the sugar will coat the rings as the sugar starts to cool down. The sugar will crystalize on the rings forming a white glaze or coating.

Hmmmm...SEDAP!
