Honey Caramel Chicken

Miss Hidayah, as requested..

Ingredients -


  1. Chicken breast sliced thin
  2. Honey
  3. Sugar
  4. Soy sauce (kicap cair)
  5. Cooking caramel (kicap pekat manis)
  6. Cornflour
  7. Salt to taste

Marinade the chicken in some cornflour, soy sauce and cooking caramel for an hour or longer.. The cornflour will make the chicken tender before cooking. Then heat up the wok with some oil. When the wok is hot, add in the chicken and stir fry it quickly. You will get a nice sizzling sound while doing this! Add in a pinch of salt to taste and honey. You can add more cooking caramel to this.. Continue to stir fry but lower the heat on the stove. When it is almost done, add few spoonful of sugar and the heat will caramelize the sugar and make the sauce thick and gooey! Add some water and let the chicken simmer on slow fire. Stir occasionally. When the sauce has thicken to such consistency as desirable, then it is ready to be served! Serve with cool cucumber..

This a simple dish with simple ingredients and best of all, there is no rule of thumb as to the portions of the ingredients! If you like the chicken to be sweet, then add on more honey and sugar but remember to control the heat least the sugar gets burnt.. Otherwise, you may end up with bitter instead of sweet-tasting dish!

P/S: For those who prefer something less sweet, the recipe can be modified by excluding the honey and sugar. For this version, it calls for 2 substitutes - onions and black pepper. Just stir fry the onions and add the marinated chicken. Instead of honey and sugar, add in the black pepper while cooking.. It is just as simple!
