Black peppered bitter gourd





















This is a simple dish of bitter gourd ( 'peria' in Malay). As the name goes, this type of gourd is BITTER! So before cooking the bitter gourd it should be sliced & rubbed with plenty of salt. By doing so, most of the bitter juices will be removed from the flesh ( this tip was passed to me by my Mum- in - law!)

Ingredients:
Sliced bitter gourd rubbed with salt. Allow to stand for 20 minutes & rinse with water.
Chopped onions.
1 - 2 tbsp of black peppercorns; crushed.
3 tbsps thick dark soy sauce
Thin slices of beef or chicken.
1 tbsp cooking oil.

Method:
In a wok, saute the onions followed by the crushed pepper.
Add the meat into the wok & fry until it changes colour; indicating it is cooked.
Add the soy sauce & bitter gourd.
Mix well until the bitter gourd has changed to a darker green colour indicating that it is done!

Serve this with rice ! Fantastic!

I love bitter gourd!! Would love to try this recipe. But can we get this in Cambridge cheap is the million dollar (or pound) question :)

Mohini,
I have seen them in the market , but it is the smaller variety...not as long as the one in the picture. I guess its better than nothing!

In M'sia, my Indian friends will slice the gourd very thinly & rub with turmeric & salt and fry them. It will turn out crispy like potato chips!
