Sweet potato patties with spicy coconut filling ( cucur badak)


Ingredients:

2 pcs large sweet potatoes (orange or pale yellow) chopped into large chunks, boiled & mashed.
2 -3 cups of plain flour

Filling:
1 packet dessicated coconut ( or grated white flesh of fresh coconut whenever possible)
2 pcs large onions quartered
2 stalks lemongrass chopped
2 tbsp chili paste
2 tbsp dried prawns soaked in hot water to soften
Tamarind juice (to taste)
2 tbsp Cooking oil
A pinch of salt & sugar

Method:
Put onions, lemon grass, chili paste & dried prawns into a blender & pulse until a paste is formed.
In a frying pan, over low heat, fry the blended ingredients in 2tbsp of oil until aromatic. Add the dessicated coconut.
Mix well & add the tamarind juice. Stir until the mixture is aromatic & a bit dry. (If it's too dry add a little bit of water) to keep it moist. When cooked, turn off the flame.

Dough:
Mixed the mashed sweet potatoes with the plain flour, aiming for a dough that is pliable.
Divide the dough into balls the size of golf balls. Dust your fingers regularly with plain flour to avoid dough from sticking to your hands.
Fill the dough with the spicy coconut filling & seal the balls completely.
Deep fry in oil until golden & serve warm.
