Bihun goreng (Fried bihun)


Ingredients:

1 packet of Bihun (rice noodles) soaked in water for 15 minutes
Bean sprouts
Carrots (shredded)
1 chicken fillet ( cut into cubes)
1 vegetable stock cube
2 tablespoons dark soy sauce
2 eggs (optional)
2 stalks spring onions sliced thin
4 pcs garlic (peeled and crushed)
2 tablespoons chili paste (optional for a less hot version)
2 tablespoons cooking oil

Method:
In a wok, saute garlic until golden brown before adding the vegetable cube.
To the mixture, add the chicken fillet and fry until chicken is cooked.
If you are making the spicy version of this dish, add the chilli paste and stir until the chili is cooked.
Add soy sauce followed by the noodles.
Mix everything thoroughly before adding the vegetables.
While the noodles are being cooked, you can clear a tiny spot in the wok & add the eggs.
If needed , drizzle additional oil to the spot in order to cook the eggs. Scrambel the eggs as they cook and mix well with the noodles.
If the noodles look too dry , add a little water to the wok.

Garnish with chopped spring oinions and serve with pickled chillies..Yummy!
