cheese and tomato tart

Easy recipe, good for picnics, and will transport you to Provence !

You need

- 1 ready-made puff pastry
- mustard
- tomatoes
- cheese (goat cheese is yummy, but you can also use mozarella)
- dried herbs (herbes de provence)
- optional : fresh herbs (basil with mozarella, French chives with goat cheese)
- olive oil
- salt and pepper

Method

Unroll your puff pastry on a baking tray. Prepare the edges - draw them with a knife, then make regular notches all along, just like a baker ;) Prick the rest of the puff pastry, spread mustard on it.
Then slice the tomatoes and cover the pastry with them. Sprinkle with salt and pepper. Slice the cheese, sprinkle with salt, pepper, herbs and some olive oil. If you use mozarrella, it might be a good idea to marinate the slices in olive oil, salt, pepper and herbs first. Add fresh herbs if you like.
Bake for about 20 minutes at 220°C.
