The trick to this apple crumble is to sauté the apples with a bit of butter and sugar before putting them in the oven dish ...
You need ...
- 500 g of peeled, chopped apples
- 300 g plain flour
- 175 g sugar + a few pinches to sauté the apples (I've started using "light brown", muscavado-kind of sugar, which makes the topping tastier but for the one I made for the B-Movie, I used cane sugar. Some people use molasses I think)
- 200 g butter
- double or extra-double cream to serve (optional)
For the weight-conscious among you, I think the crumble could also work with a bit less sugar and butter ... but on the other hand, if you've decided to have some crumble, you might as well enjoy it to the full !
Method
1. Peel the apples, chop them. Transfer to a frying pan, add some butter and sugar. The idea is to caramelise them so use high heat otherwise it will melt without caramelising. Then add cinnamon to taste. Once that's done, put everything in an oven dish.
2. Put the flour, sugar and butter in a bowl. Slowly mix them with your fingertips until you have a nice crumbly texture (not a dough !). Put that on top of the apples.
3. Bake for about 30-45 min in a 180°C oven. It depends on the oven so just take a little bit of topping to see if it's cooked. If you notice the top is getting burnt, cover it with foil paper.
